Polish Sausage and Cabbage Soup

I hope you like cabbage and polish sausage!  This recipe is really simple.  The prep time is about 15 minutes.  A little preparation early in the morning can free up the rest of your day. Dice, slice, and toss it all into a crock pot! 

Ingredients:

2 cups cubed peeled potatoes
4 cups packaged shredded cabbage with carrot (cole slaw mix)  I just used a fresh head of cabbage
1 large onion
2 tsp caraway seeds, crushed
1 pound cooked Polish sausage, halved lengthwise, then sliced in 1/2” pieces
4 cups reduced-sodium chicken broth

You will need a 3 1/2 to 6-quart slow cooker.  Place all of the ingredients into the slow cooker.  Pour the broth over it all.  Cover and cook for 10-12 hours on low or 5-6 hours on high.  To serve, ladle into bowls.

This recipe should be good for freezing for a later meal.  I would have tried it, accept I accidentally left it sit out all night.  Believe me, I kicked myself in the butt for being so forgetful and wasteful!  Grrrr!!!
